I was inspired by Robert J. Lang to begin complex origami. His book Origami Design Secrets (see the link below) is more than just recipes; it gives a method for creating your own complex origami models. I've read it end to end at least three times. Robert Lang's website is also worth checking out. His models have incredible detail and will blow your mind.
