One important idea to keep in mind, is that you should have a fixed plan for selecting people who walk by the booths (for example, always approach every 3rd person). Otherwise you will be more vulnerable to selection biases (yours, in terms of who you would prefer to talk to, and the respondents', in terms of who is more likely to take or more interested in taking, yuor survey).
